4-Ingredient Banana Snack "Cookie"

Serves: Makes approx. 18 cookies

Ingredients

  1. 2 very ripe bananas, the riper the better

  2. 1 cup rolled or quick cooking oats

  3. ¼ cup unsweetened nut or seed butter of choice (almond, sunflower, peanut, etc...)

  4. ½ cup dried fruit (I prefer chopped, pitted dates, but raisins, cranberries, and chopped apricots also taste great)

Instructions

  1. Preheat oven to 350. Line a baking sheet with parchment paper.

  2. In a medium bowl mash together banana with a fork. Stir in remaining ingredients. Mix well. Drop 1 tablespoon at a time of mixture onto baking sheet, flattening gently with your hand. Bake for 12-14 minutes until cooked through and lightly golden.
