Feeding Emme: Peach Baby Oatmeal

Peach Baby Oatmeal

Serves: Makes approx. 3 cups

Ingredients

  1. 1 cup whole quick cooking oats (I use these)

  2. 2 cups water

  3. ½ tablespoon pure maple syrup, optional

  4. ½ teaspoon pure vanilla extract

  5. ¼ teaspoon cinnamon

  6. ⅛ teaspoon ground ginger

  7. 2 ripe peaches, pitted and roughly chopped

Instructions

  1. Grind oats in a small food processor until powdery.

  2. Bring water to a boil in a small saucepan. Slowly pour in ground oats and whisk until smooth. Lower heat and add maple syrup, vanilla, cinnamon and ginger. Continue to stir and cook over low heat for 5 minutes.

  3. Meanwhile, rinse out food processor and add chopped peaches; puree until smooth (leaving a few chunks for older babies).

  4. Stir in peach puree to cooked oatmeal. Let cool and serve.

Notes

Oatmeal will last for up to 5 days in fridge or 2 months in freezer.
