Flourless Black Bean & Chia Seed Brownie Bites
Serves: Makes 24 brownie bites
Ingredients
1 tablespoon chia seeds
1 15oz. can black beans, drained and rinsed well
1 egg
3 tablespoons water
¼ cup pure maple syrup
½ cup cocoa powder
1 teaspoon vanilla extract
¼ teaspoon salt
1 teaspoon baking powder
¼ cup coconut oil
½ cup dark chocolate chips
Instructions
Preheat oven to 350. Spray a mini-muffin tin with nonstick cooking spray - I use a coconut oil one.
Process chia seeds in a coffee or spice grinder until they form a powdery consistency (this step is not necessary, I just feel it improves the texture).
Add chia powder to the bowl of a food processor along with black beans, egg, water, maple syrup, cocoa powder, vanilla and salt. Process until a smooth batter forms.
Stir in the chocolate chips. Spoon batter into prepared mini-muffin pan. Place in the oven on top or middle rack for 25-30 minutes. Cool completely in pan before serving.
