Mango, Sweet Potato, and Apple Puree
Serves: 1½ cups puree
1 large sweet potato, peeled and cut into cubes
1 mango, peeled and cut into chunks
2 medium red apples, peeled and cut into chunks
1 tablespoon extra virgin olive oil
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
Preheat oven to 350. Line a rimmed baking sheet with parchment paper.
In a large bowl, mix all ingredients together.
Spread the mixture onto the baking sheet and roast in the oven until browned and tender, about 20-25 minutes.
Scrape ingredients into the bowl of a food processor and puree until smooth. If you would like your puree smoother or thinner, add a tablespoon of water at a time until desired consistency.
