I discovered these mini popcorn cakes over the summer and they have been a game changer around here. Like mini rice cakes, only popcorn, and really, really delicious. Not too dry, not too salty, and just right for topping with peanut butter, fruit, cheese, avocado, hummus, tuna, we’ve tried it all. Today, I’m sharing our peanut butter version. So easy, I don’t even need to write a recipe. Just top these little crispy, crunchy cakes with a dab of unsweetened peanut butter and your favorite fresh fruit. Our current number 1’s are strawberry, blueberry, pomegranate, and of course, banana. Sprinkle with flax meal, chia seeds, bee pollen or hemp hearts for an extra powerful nutritional boost! * Side note: Am I the only one who thinks peanut butter and banana is a WAY better combination than peanut butter and chocolate??
