If you’re looking for a quick, easy, and healthy way to make pudding, say hello to the chia seed. Full of fiber, antioxidants and omega 3’s, these little seeds have the unique property of expanding in liquid and taking on a gelatin-like texture. Add a few additional ingredients, and you’ll have delicious, rich and creamy pudding without even looking at the stove. Chia seeds are also great added to baked goods, smoothies, cereal, and yogurt. Audrey loves this pudding so much I wasn’t able to get a proper photo of it before she snatched it away from me. Mental note: pix are best taken while she is napping.
