Recipe: Chocolate Coconut Chia Pudding


If you’re looking for a quick, easy, and healthy way to make pudding, say hello to the chia seed.  Full of fiber, antioxidants and omega 3’s, these little seeds have the unique property of expanding in liquid and taking on a gelatin-like texture.  Add a few additional ingredients, and you’ll have delicious, rich and creamy pudding without even looking at the stove.  Chia seeds are also great added to baked goods, smoothies, cereal, and yogurt.  For more information on the benefits of chia seeds click here.

Audrey loves this pudding so much I wasn’t able to get a proper photo of it before she snatched it away from me.  Mental note: pix are best taken while she is napping.

Chocolate Coconut Chia Pudding 

12 months + up (younger without the cocoa)

Makes 2-4 servings

  1. 1 cup coconut milk

  2. 1/4 cup chia seeds

  3. 2 tablespoons cocoa powder

  4. 3 tablespoons pure maple syrup (agave nectar and honey work as well)

  5. 1/2 teaspoon vanilla extract

  6. Unsweetened shredded coconut for garnish

In a medium-sized bowl or large mason jar add the milk, chia seeds, cocoa powder, maple syrup and vanilla.  Stir (or shake if using mason jar) until well combined.  Place in the fridge to chill for 30 minutes; stir/shake again.  Chill for an additional 30 minutes.  Place into serving bowls and garnish with shredded coconut.
