Recipe: Herb-Crusted Cod


Herb-Crusted Cod

9 months + up/Finger Foods

Makes 2 (2 oz.) servings

  1. 1 tablespoon breadcrumbs (preferably whole grain or gluten-free)

  2. 1/4 teaspoon orange zest

  3. 1/4 teaspoon dried tarragon

  4. Pinch of salt and pepper

  5. 4 oz. piece of cod

  6. 1 teaspoon extra-virgin olive oil

On a small plate, combine breadcrumbs, zest, tarragon, salt and pepper. Pat both sides of fish dry with a paper towel and place in breadcrumb mixture. Press down and flip, ensuring breadcrumbs have coated both sides of fish. Meanwhile, heat oil in a skillet over medium-high heat. Once hot, add breaded fish and cook 2-3 minutes per side, until golden brown and opaque throughout. Flake with a fork into small pieces and enjoy.
