Roasted Pear Applesauce

Serves: 4

Ingredients

  1. 2 red apples, peeled, cored and cut into chunks

  2. 2 pears, cut into chunks

  3. 2 tablespoons coconut oil

  4. 1 tablespoon maple syrup, optional

  5. 1 tablespoon lemon juice

  6. ½ teaspoon cinnamon

  7. ¼ teaspoon ginger powder

Instructions

  1. Preheat oven to 425. Line a baking sheet with parchment paper.

  2. In a medium bowl, toss together all ingredients. Scatter onto baking sheet. Place in the oven and cook for 15-20 minutes, or until apples and pears are beginning to lightly brown and are fork tender. Remove from oven and place in a food processor. Puree until desired consistency.
