Roasted Pear Applesauce
2 red apples, peeled, cored and cut into chunks
2 pears, cut into chunks
2 tablespoons coconut oil
1 tablespoon maple syrup, optional
1 tablespoon lemon juice
½ teaspoon cinnamon
¼ teaspoon ginger powder
Preheat oven to 425. Line a baking sheet with parchment paper.
In a medium bowl, toss together all ingredients. Scatter onto baking sheet. Place in the oven and cook for 15-20 minutes, or until apples and pears are beginning to lightly brown and are fork tender. Remove from oven and place in a food processor. Puree until desired consistency.
